Allergies and Food Sensitivities
This is notes for what to make for people who have allergies and food sensitivities.
Celiac/Gluten Free
General strategy is to make stuff that’s naturally gluten free – mostly, no bread or pasta. Dishes that naturally use rice or potatoes as the starch. A lot of Asian, African, Middle Eastern, and Spanish dishes.
Stuff to watch out for:
- Spice blends
- Soy sauce
Ideal Substitutions
- Pasta - Jovial and Banza brands

- Chicken Tikka Masala — My attempt at Chicken Tikka Masala for a home kitchen without a tandoor
- Hummus
- Overnight Oatmeal — Creamy and satisfying slow-cooker oatmeal. Easy breakfast.
- Popcorn — Various popcorn recipes, likely all involving a wok.
- Pressure Cooker Rice — Various rice preparations using a modern pressure cooker.
- Simple Tomato Sauce, Monacilioni Style — Simple and quick tomato sauce, the way my nonna taught me.
