Meatloaf
Work in progress. Trying to replace the salt with beef stock concentrate, which has a fair bit of salt, but also a lot of other things as well.
Ingredients
- 2 lb 80% lean ground beef
- 1 cup crushed stale bread or breadcrumbs
- 2 large eggs, beaten
- 1 medium onion, minced
- 2 tbsp Worcestershire sauce
- 2 tbsp milk
- 2 teaspoons Better than Bullion beef base (or 1 tsp salt)
- 1 tsp garlic powder
- ½ tsp black pepper
Directions
- Saute onions until soft and tender.
- Add all ingredients to a large mixing bowl. Mix by hand until mixture is smooth.
- Cover and refrigerate mixture for at least 30 minutes.
- Preheat oven to 375°F.
- Form into an oblong loaf. Place on parchment-lined sheet pan.
- Bake at 375°F until internal temperature of 160°F
- Optional: baste with glaze (ketchup, BBQ sauce, etc.) and broil until caramelized.
- Let meatloaf rest for 10-15 minutes at room temperature.
- Slice and serve.
