Meatloaf

Work in progress. Trying to replace the salt with beef stock concentrate, which has a fair bit of salt, but also a lot of other things as well.

Ingredients

  • 2 lb 80% lean ground beef
  • 1 cup crushed stale bread or breadcrumbs
  • 2 large eggs, beaten
  • 1 medium onion, minced
  • 2 tbsp Worcestershire sauce
  • 2 tbsp milk
  • 2 teaspoons Better than Bullion beef base (or 1 tsp salt)
  • 1 tsp garlic powder
  • ½ tsp black pepper

Directions

  1. Saute onions until soft and tender.
  2. Add all ingredients to a large mixing bowl. Mix by hand until mixture is smooth.
  3. Cover and refrigerate mixture for at least 30 minutes.
  4. Preheat oven to 375°F.
  5. Form into an oblong loaf. Place on parchment-lined sheet pan.
  6. Bake at 375°F until internal temperature of 160°F
  7. Optional: baste with glaze (ketchup, BBQ sauce, etc.) and broil until caramelized.
  8. Let meatloaf rest for 10-15 minutes at room temperature.
  9. Slice and serve.
