Cavatelli
- 4 cups Unbleached Flour
- 1 egg
- 1 2/3 to 1 ¾ cups Luke warm Water
Place flour on table and spread out leaving a hole in the center
Crack egg and pour into center of flour
Pour in 1 ½ cups of water to start
Knead dough to a soft consistency, adding more water as necessary. Continue folding dough several times.
Let dough rest for 5 mins
Knead again into a long loaf
Fold in two and cut down the center
Knead each piece a few times and form into a round piece
Cover with plate and allow to rest for 5-10 mins
