Hot Buttered Rum Batter

Ingredients:

  • 4 ounces (1 stick) unsalted butter, room temperature
  • 8 ounces brown sugar or demerara sugar (Sugar in the Raw)
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon freshly grated nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cardimom

Directions:

  1. Combine sugar and spices.
  2. Cream sugar into butter with hand mixer or stand mixer until combined.
  3. Divide into 12 portions (1 oz each), roll into balls, and refridgerate overnight.

Hot buttered Rum

Ingredients

  • 5 oz boiling water
  • 1.5 oz dark or demerara or aged rum (see notes)
  • 1 oz hot buttered rum batter (see above)

Directions:

  1. Add batter to mug.
  2. Cover with 5oz hot water, stir vigorously with fork until dissolved and emulsified.
  3. Add rum.
  4. Optionally add a small splash of vanilla extract and/or heavily spiced rum (e.g., Mamajuana) to taste.

Notes:

  • Best rum combination I’ve found is equal parts Smith & Cross and Captain Morgan’s, with a splash of Mamajuana floated on top.
