Quick Weeknight Dinner Ideas

This is a list of easy, quick recipes with low ingredient counts that Aaron could reasonably make on a weeknight with minimal prep and minimal dishes.

The intention is for this list to grow over time, and even split into catagories that can be filtered.


Chicken Chasseur

Ingredients

  • 4 lb bone-in, skin-on chicken pieces
  • 1 lb mushrooms, halved
  • 1-2 shallots
  • 1-2 carrots, diced
  • 14 oz can of crushed tomatoes
  • flour
  • chicken stock
  • soy sauce
  • brandy and/or white wine
  • oil
  • butter
  • fresh herbs for garnish (I like tarragon)
  • salt
  • pepper
  • cooked egg noodles or Spätzle, tossed with a little butter

Directions

  1. Sautee mushrooms and carrot in oil. After the carrots start to soften, add the shallot to the pan. Cook until soft. Remove or push to side of the pan.
  2. Season the chicken pieces heavily with salt and pepper and dust lightly with the flour. Brown chicken in pan.
  3. Deglaze the pan with brandy, add the vegetables back if necessary, stir in the tomatoes, additional wine/brandy to taste, and enough stock to cover everything. Simmer until the chicken is as tender (about an hour).
  4. Remove chicken and veg, boil the sauce to reduce to desired thickness.
  5. Return the chicken to the pan to coat and reheat, garnish with fresh herbs and serve over noodles or spätzle.

Sausage, Veggies, and Spätzle

Ingredients:

  • Fresh sausage (Italian, Kielbasa, Bratwurst, etc.)
  • Onions, sliced
  • Other veggies - peppers, peas, spinach, chard, etc.
  • Salt
  • Olive oil
  • Optional: beer or wine
  • Spätzle

Directions

  1. Add oil to pan, set burner to medium-low. Add onions to pan, sprinkle liberally with salt, and cook slowly until sweet and jammy.
  2. Add other veggies, cook to desired texture.
  3. Brown sausage under broiler or on grill
  4. Add sausages to pan.
  5. Optional: deglaze with beer/wine. Reduce into a syrupy sauce.
  6. Serve over Spätzle
